Brook trout and salmon are reared on a unique site in the Haute-Marne: the La Belle Fontaine fish farm. Located on a former watercress bed where the purest spring water has been flowing for decades, the farm boasts ideal rearing conditions for these highly demanding fish.

Giving birth to hundreds of thousands of salmonids every year, which grow peacefully in the farm's 60 ponds, the owners use their recognised expertise to rear their fish from egg to spawn.
