The first records of the Baissey mill date back to the middle of the 13th century... Restored in the 1980s, it is now one of the last traditional mills in the region.

The pride of the small Champagne village of Baissey, the mill comes alive to the rhythm of the water driving the waterwheel that operates its millstones... A sight from another time, yet one that is so rewarding, the renovation of the site has enabled us to highlight the size and importance of this mill... Imagine a millrace dug into the hillside that carries the water over 1.2 km to the mill, culminating in a 7 m waterfall to drive the mechanisms...

The mill has evolved over the centuries; the current buildings and mechanisms date from the 19th century... It still has its millstones, bluteries, sieves and a small electric plant dating from 1914, which was the first electrification of the village.

Demonstrations of old-fashioned milling and sifting, accompanied by the sweet aroma of fresh flour, will introduce you to the ancient trade of the miller and his ancestral know-how. As places of passage and conviviality, mills were at the heart of village life.

Today, the mill is still in perfect working order.

The mill, with its millstream, has been listed on the Inventaire Supplémentaire des Monuments Historiques since 20 March 1996.

Come and visit it, and you'll be immersed in the legends and stories of Baissey, a village located at the heart of this mysterious territory that was once inhabited by wolves. Open only for the JEP and mill days.
