Our restaurant, Bulles d'Osier, is situated in the former officers’ mess in Langres. This elegant townhouse, now a charming establishment nestled in the heart of a vast vegetable garden, celebrates – through its name and décor – the basket-weaving expertise of Fayl-Billot, the birthplace of chef Laurent Petit.
At the helm of the kitchen, Valentin Loison creates a carte blanche menu inspired by nature and the local terroir. His cuisine showcases wild plants, vegetables from the garden, locally reared produce, fish from the Saône and seasonal game. Each dish reveals a quest for balance, precision and creativity, with combinations that are as subtle as they are daring.
