The red-legged crayfish is one of the jewels of our rivers: a symbol of pure water and gastronomic excellence.
Today it is threatened by pollution and the crayfish plague. It is with pride and passion that I raise these discreet freshwater crustaceans naturally and extensively for restocking and consumption.
Nestling in a natural setting in a small valley close to the Marne river, the Moulin aux écrevisses offers comfortable guest rooms and the opportunity to delight your taste buds with a table d'hôtes: crayfish tasting, local and farm produce.
Visits to the farm are available to all guests of the mill and to groups of 8 or more by prior arrangement only.
The moulin aux écrevisses also offers crayfish tasting by prior arrangement at weekends outside the B&B setting for groups of 8 to 15 people under the "Accueil Paysans" label.
